A rich and creamy chocolate dessert with a crispy caramelized top.
Ingredients

- 2 cups heavy cream
- 1 cup whole milk
- 6 oz dark chocolate, chopped
- 5 large egg yolks
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1/4 cup brown sugar for topping
Instructions
- Preheat oven to 325°F (160°C).
- In a saucepan, heat cream and milk over medium heat until just boiling.
- Add chopped chocolate and stir until melted and smooth.
- In a bowl, whisk egg yolks and granulated sugar until pale.
- Gradually add the chocolate mixture to the egg mixture, whisking continuously.
- Stir in vanilla extract.
- Pour mixture into ramekins.
- Place ramekins in a baking dish and fill with hot water halfway up the sides.
- Bake for 30-35 minutes until set but still slightly jiggly.
- Remove from oven and cool, then refrigerate for at least 2 hours.
- Before serving, sprinkle brown sugar on top and caramelize with a kitchen torch or broiler.
