Description

A rich and creamy chocolate dessert with a crispy caramelized top.


Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 6 oz dark chocolate, chopped
  • 5 large egg yolks
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 cup brown sugar for topping

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a saucepan, heat cream and milk over medium heat until just boiling.
  3. Add chopped chocolate and stir until melted and smooth.
  4. In a bowl, whisk egg yolks and granulated sugar until pale.
  5. Gradually add the chocolate mixture to the egg mixture, whisking continuously.
  6. Stir in vanilla extract.
  7. Pour mixture into ramekins.
  8. Place ramekins in a baking dish and fill with hot water halfway up the sides.
  9. Bake for 30-35 minutes until set but still slightly jiggly.
  10. Remove from oven and cool, then refrigerate for at least 2 hours.
  11. Before serving, sprinkle brown sugar on top and caramelize with a kitchen torch or broiler.
