Description

A rich and creamy chocolate fudge truffle cheesecake with a chocolate cookie crust.


Ingredients

  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Mix cookie crumbs and melted butter in a bowl.
  3. Press the mixture into the bottom of a springform pan.
  4. Beat cream cheese, sugar, and vanilla in a large bowl until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Stir in sour cream and mix until combined.
  7. Melt chocolate chips and heavy cream together, then fold into the cream cheese mixture.
  8. Pour the filling over the crust in the pan.
  9. Bake for 50-60 minutes or until the center is set.
  10. Let cool, then refrigerate for at least 4 hours before serving.

  • Top with chocolate ganache or whipped cream if desired.
