A rich and creamy chocolate fudge truffle cheesecake with a chocolate cookie crust.

- 1 ½ cups chocolate cookie crumbs
- ½ cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
Instructions
- Preheat oven to 325°F (160°C).
- Mix cookie crumbs and melted butter in a bowl.
- Press the mixture into the bottom of a springform pan.
- Beat cream cheese, sugar, and vanilla in a large bowl until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in sour cream and mix until combined.
- Melt chocolate chips and heavy cream together, then fold into the cream cheese mixture.
- Pour the filling over the crust in the pan.
- Bake for 50-60 minutes or until the center is set.
- Let cool, then refrigerate for at least 4 hours before serving.
Notes
- Use room temperature ingredients for best results.
- Top with chocolate ganache or whipped cream if desired.
- Store leftovers in the refrigerator.
