Ingredients

  • 2 large eggs
  • 8 ounces dark chocolate, melted
  • 1 cup heavy cream
  • 1/4 cup cocoa powder
  • 1/2 cup chocolate wafer crumbs
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine chocolate wafer crumbs and melted butter. Press this mixture into the bottom of a springform pan to form the crust.
  3. In a mixing bowl, beat cream cheese until smooth. Gradually add sugar and vanilla, mixing until combined.
  4. Add eggs one at a time, mixing well after each addition.
  5. Fold in melted dark chocolate until fully incorporated.
  6. Pour the cheesecake batter over the crust in the springform pan.
  7. Bake in the preheated oven for 50-60 minutes or until the center is set.
  8. Allow to cool to room temperature, then refrigerate for at least 4 hours or overnight.
  9. Whip the heavy cream and fold in cocoa powder until combined. Spread over the chilled cheesecake.
  10. Slice and serve, garnishing with chocolate shavings if desired.
