A rich and creamy chocolate mousse cheesecake that combines the best of both desserts.

- 12 ounces cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 8 ounces dark chocolate, melted
- 1 cup heavy cream
- 1/4 cup cocoa powder
- 1/2 cup chocolate wafer crumbs
- 1/4 cup unsalted butter, melted
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, combine chocolate wafer crumbs and melted butter. Press this mixture into the bottom of a springform pan to form the crust.
- In a mixing bowl, beat cream cheese until smooth. Gradually add sugar and vanilla, mixing until combined.
- Add eggs one at a time, mixing well after each addition.
- Fold in melted dark chocolate until fully incorporated.
- Pour the cheesecake batter over the crust in the springform pan.
- Bake in the preheated oven for 50-60 minutes or until the center is set.
- Allow to cool to room temperature, then refrigerate for at least 4 hours or overnight.
- Whip the heavy cream and fold in cocoa powder until combined. Spread over the chilled cheesecake.
- Slice and serve, garnishing with chocolate shavings if desired.
Notes
- For a richer flavor, use high-quality dark chocolate with at least 70% cocoa.
- Consider adding a layer of fruit preserves for added acidity.
- Experiment with different crusts, such as graham cracker or almond.
