- 1 whole chicken (about 4–5 lbs)
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 4 cloves garlic, minced
- 1 lemon, quartered
- 1 onion, quartered
- 2 cups chicken broth
- 1 cup white wine
- 2 cups seasonal vegetables (carrots, Brussels sprouts, parsnips), cut into bite-sized pieces
Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry with paper towels and place it in a roasting pan.
- Rub the olive oil over the chicken, then season with salt, pepper, rosemary, thyme, and minced garlic.
- Stuff the cavity with lemon and onion quarters.
- Arrange the vegetables around the chicken in the roasting pan.
- Pour the chicken broth and white wine into the pan.
- Roast the chicken for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
- Baste the chicken with the pan juices halfway through cooking.
- Remove the chicken from the oven and let it rest for 15 minutes before carving.
- Serve with the roasted vegetables and pan sauce.
