Ingredients

- 1 whole turkey (12–14 pounds)
- 4 tablespoons olive oil
- 2 tablespoons salt
- 1 tablespoon black pepper
- 2 cups chicken broth
- 1 onion, quartered
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 sprigs fresh rosemary
- 4 sprigs fresh thyme
- 1 lemon, halved
Instructions
- Preheat your oven to 325°F (165°C).
- Remove the turkey giblets and pat the turkey dry.
- Rub olive oil over the turkey and season with salt and pepper.
- Stuff the cavity with onion, carrots, celery, rosemary, thyme, and lemon.
- Place the turkey in a roasting pan and add chicken broth to the bottom.
- Cover with foil and roast for 2 hours.
- Remove the foil and roast for another 1 to 2 hours, basting every 30 minutes.
- Check the internal temperature; it should reach 165°F (74°C).
- Let the turkey rest for 20 minutes before carving.
Notes
- Make sure to let the turkey rest for better juiciness.
- Save the drippings for gravy.
