Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the Brussels sprouts and carrots with olive oil, salt, and pepper.
- Spread the vegetables on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes until golden brown.
- Remove from the oven and sprinkle with Parmesan cheese.
- Serve warm.
