Description
A festive roast duck perfect for Christmas celebrations.
Ingredients

- 1 whole duck (4–5 lbs)
- 2 oranges, quartered
- 4 cloves of garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- 1 cup chicken broth
Instructions
- Preheat your oven to 375°F (190°C).
- Clean the duck and pat it dry.
- Season the inside with salt and pepper.
- Stuff the cavity with orange quarters, garlic, rosemary, and thyme.
- Rub the skin with salt and pepper.
- Place the duck breast side up on a roasting rack in a roasting pan.
- Pour chicken broth into the pan.
- Roast for 1.5 to 2 hours, basting every 30 minutes.
- Check internal temperature; it should reach 165°F (74°C).
- Let the duck rest for 15 minutes before carving.
Notes
- Make sure to remove excess fat from the cavity.
- Serve with roasted vegetables for a complete meal.
