A festive roast duck perfect for Christmas celebrations.


Ingredients

  • 1 whole duck (45 lbs)
  • 2 oranges, quartered
  • 4 cloves of garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Clean the duck and pat it dry.
  3. Season the inside with salt and pepper.
  4. Stuff the cavity with orange quarters, garlic, rosemary, and thyme.
  5. Rub the skin with salt and pepper.
  6. Place the duck breast side up on a roasting rack in a roasting pan.
  7. Pour chicken broth into the pan.
  8. Roast for 1.5 to 2 hours, basting every 30 minutes.
  9. Check internal temperature; it should reach 165°F (74°C).
  10. Let the duck rest for 15 minutes before carving.

Notes

  • Make sure to remove excess fat from the cavity.
  • Serve with roasted vegetables for a complete meal.
