A festive Christmas pasta salad with vibrant colors and flavors.


Ingredients

  • 2 cups of rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumbers, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup bell pepper, diced
  • 1 cup mozzarella balls
  • 1/4 cup olives, sliced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup Italian dressing

Instructions

  1. Cook the rotini pasta according to package instructions.
  2. Drain and rinse under cold water.
  3. In a large bowl, combine the pasta, cherry tomatoes, cucumbers, red onion, bell pepper, mozzarella balls, olives, and parsley.
  4. Pour the Italian dressing over the salad and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.
