Ingredients

- Salt to taste
Instructions
- In a large bowl, combine quinoa, bell peppers, black beans, corn, red onion, and cilantro.
- In a small bowl, whisk together lime juice, cumin, and salt.
- Pour the dressing over the quinoa mixture and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
- Serve cold or at room temperature.
