Description

A traditional dessert enjoyed during Christmas celebrations.


Ingredients

  • 200g dried mixed fruit
  • 100g raisins
  • 100g currants
  • 50g chopped almonds
  • 100g brown sugar
  • 200g breadcrumbs
  • 100g self-raising flour
  • 1 tsp mixed spice
  • 1 tsp cinnamon
  • 2 large eggs
  • 150ml milk
  • 50ml brandy

Instructions

  1. Preheat the oven to 150°C (300°F).
  2. In a bowl, mix all the dried fruits, nuts, and sugar.
  3. Add breadcrumbs, flour, mixed spice, and cinnamon. Stir to combine.
  4. In another bowl, whisk the eggs, milk, and brandy.
  5. Pour the wet mixture into the dry ingredients and mix well.
  6. Grease a pudding basin and pour in the mixture.
  7. Cover with parchment paper and foil.
  8. Steam for 2 hours in a pot of simmering water.
  9. Remove and let it cool.
  10. Serve warm with custard or cream.

Notes

  • Can be made a few weeks in advance.
  • Store in a cool, dark place.
  • Reheat by steaming before serving.
