Description
A festive rice dish perfect for Christmas celebrations.
Ingredients

- 2 cups of rice
- 4 cups of chicken broth
- 1 cup of mixed vegetables (carrots, peas, corn)
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- Salt and pepper to taste
- 1/4 cup of chopped parsley
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and garlic, sauté until translucent.
- Stir in the rice, and cook for 2 minutes.
- Add chicken broth and bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Add mixed vegetables, cover, and cook for an additional 5 minutes.
- Fluff rice with a fork and stir in chopped parsley.
Notes
- This dish can be made a day ahead and reheated.
- Feel free to add nuts or dried fruits for a festive twist.
- Adjust seasoning to your preference.
