Ingredients

  • 2 cups of rice
  • 4 cups of chicken broth
  • 1 cup of mixed vegetables (carrots, peas, corn)
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • 1/4 cup of chopped parsley

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Stir in the rice, and cook for 2 minutes.
  4. Add chicken broth and bring to a boil.
  5. Reduce heat, cover, and simmer for 15 minutes.
  6. Add mixed vegetables, cover, and cook for an additional 5 minutes.
  7. Fluff rice with a fork and stir in chopped parsley.

Notes

  • This dish can be made a day ahead and reheated.
  • Feel free to add nuts or dried fruits for a festive twist.
