Instructions
- Cut sponge cake into cubes.
- If using, drizzle sherry over the cake cubes.
- Layer sponge cake at the bottom of a trifle dish.
- Add a layer of custard over the cake.
- Add a layer of mixed berries.
- Add a layer of whipped cream.
- Repeat layers until dish is full.
- Top with remaining whipped cream and garnish with mint.
- Chill for at least 2 hours before serving.
