Ingredients

  • 1 whole turkey (1214 lbs)
  • 1 cup unsalted butter, softened
  • 2 tablespoons salt
  • 1 tablespoon black pepper
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups stuffing mix
  • 1 cup chopped fresh herbs (sage, thyme, rosemary)

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Remove the turkey giblets and pat the turkey dry with paper towels.
  3. In a bowl, mix butter, salt, and pepper. Rub this mixture under the skin of the turkey.
  4. Fill the turkey cavity with stuffing and herbs.
  5. Place the turkey on a rack in a roasting pan.
  6. Pour chicken broth into the pan.
  7. Cover the turkey with aluminum foil.
  8. Roast for about 3 hours, basting every 30 minutes.
  9. Remove the foil in the last hour to brown the skin.
  10. Check the internal temperature; it should reach 165°F (75°C).
  11. Let the turkey rest for 20 minutes before carving.
