Ingredients
- Brussels sprouts – 1 pound
- Carrots – 1 pound
- Green beans – 1 pound
- Olive oil – 3 tablespoons
- Garlic – 3 cloves, minced
- Salt – to taste
- Pepper – to taste
- Fresh herbs – 1/4 cup, chopped (rosemary, thyme, parsley)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and trim the Brussels sprouts, carrots, and green beans.
- In a large bowl, combine the vegetables with olive oil, garlic, salt, and pepper.
- Toss until the vegetables are well coated.
- Spread the vegetables on a baking sheet in a single layer.
- Roast for 20-25 minutes, stirring halfway through.
- Remove from the oven and sprinkle with fresh herbs before serving.
