Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter.
- Press the mixture into a 9×9-inch baking pan to form the crust.
- In a mixing bowl, beat the cream cheese and powdered sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract, cinnamon, and sour cream until combined.
- Pour the cheesecake mixture over the crust in the baking pan.
- In a small bowl, mix brown sugar and granulated sugar for the topping.
- Sprinkle the sugar mixture over the cheesecake layer.
- Bake for 30-35 minutes or until set. Let it cool before slicing into bars.
Notes
- For a richer flavor, use a mix of cream cheese and mascarpone.
- Chill the bars for at least 2 hours before serving.
- Serve with a drizzle of chocolate or caramel sauce for presentation.
