Ingredients

  • 2 cups grated zucchini
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)
  • 1/4 cup brown sugar
  • 1/4 cup all-purpose flour (for streusel)
  • 1 teaspoon ground cinnamon (for streusel)
  • 2 tablespoons butter, melted (for streusel)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix zucchini, sugar, oil, eggs, and vanilla.
  3. In another bowl, combine flour, baking powder, baking soda, cinnamon, and salt.
  4. Gradually add dry ingredients to the wet mixture, stirring until just combined.
  5. If using, fold in walnuts.
  6. Pour half of the batter into a greased loaf pan.
  7. In a small bowl, mix brown sugar, flour, cinnamon, and melted butter to make the streusel. Sprinkle half of it over the batter.
  8. Add the remaining batter and top with the rest of the streusel.
  9. Bake for 60-70 minutes or until a toothpick comes out clean.
  10. Let cool before slicing.
