Delicious cinnamon streusel zucchini bread that is moist and flavorful.
Ingredients

- 2 cups grated zucchini
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts (optional)
- 1/4 cup brown sugar
- 1/4 cup all-purpose flour (for streusel)
- 1 teaspoon ground cinnamon (for streusel)
- 2 tablespoons butter, melted (for streusel)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix zucchini, sugar, oil, eggs, and vanilla.
- In another bowl, combine flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add dry ingredients to the wet mixture, stirring until just combined.
- If using, fold in walnuts.
- Pour half of the batter into a greased loaf pan.
- In a small bowl, mix brown sugar, flour, cinnamon, and melted butter to make the streusel. Sprinkle half of it over the batter.
- Add the remaining batter and top with the rest of the streusel.
- Bake for 60-70 minutes or until a toothpick comes out clean.
- Let cool before slicing.
Notes
- Store in an airtight container to keep it moist.
- This bread freezes well.
- Adjust sugar based on the sweetness of zucchini.
