Description

A cob loaf is a round bread loaf that is hollowed out and filled with a creamy dip or spread.


Ingredients

  • 1 large cob loaf
  • 1 cup cream cheese
  • 1 cup sour cream
  • 1 cup grated cheese
  • 1/2 cup chopped chives
  • 1/2 cup diced bell pepper
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Cut the top off the cob loaf and hollow out the inside.
  3. In a bowl, mix cream cheese, sour cream, grated cheese, chives, and bell pepper.
  4. Season with salt and pepper.
  5. Fill the hollowed cob with the mixture.
  6. Place the lid back on the cob and wrap it in foil.
  7. Bake for 30 minutes.
  8. Remove the foil and bake for another 10 minutes until golden.

Notes

  • Serve with vegetable sticks or crackers.
  • Can be made a day in advance and baked before serving.
