- 1 cup coconut milk
- 1 cup heavy cream
- 3/4 cup sugar
- 3 large eggs
- 1/4 cup cornstarch
- 1 tsp vanilla extract
- 1 cup shredded coconut
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together coconut milk, heavy cream, sugar, eggs, and cornstarch.
- Stir in vanilla extract and shredded coconut.
- Pour the mixture into the pie crust.
- Bake for 45-50 minutes or until set.
- Let it cool before serving.
