A delicious coffee cheesecake that combines the rich flavors of coffee and cream cheese.

- 1 1/2 cups graham cracker crumbs
- 1/2 cup sugar
- 1/3 cup butter, melted
- 4 (8 ounce) packages cream cheese
- 1 cup sugar
- 4 eggs
- 1 cup brewed coffee, cooled
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, 1/2 cup sugar, and melted butter.
- Press the mixture into the bottom of a springform pan.
- In a large bowl, beat cream cheese with 1 cup sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in cooled coffee and vanilla extract.
- Pour the mixture over the crust in the springform pan.
- Bake for 55-60 minutes or until set.
- Allow to cool before refrigerating for at least 4 hours.
Notes
- Serve chilled for best flavor.
- Top with chocolate shavings or whipped cream if desired.
