Ingredients

- 1 cup almond flour
- 1 cup powdered sugar
- 3 large egg whites
- 1/4 cup granulated sugar
- 1 tablespoon instant coffee
- 1/2 cup unsalted butter
- 1 cup powdered sugar for filling
- 1 tablespoon espresso
Instructions
- Preheat the oven to 300°F (150°C).
- Sift almond flour and powdered sugar together.
- Whip egg whites until foamy, then gradually add granulated sugar and whip until stiff peaks form.
- Fold in the almond flour mixture and instant coffee until combined.
- Pipe small circles onto a baking sheet lined with parchment paper.
- Let them sit for 30 minutes to form a skin.
- Bake for 15-20 minutes.
- Allow to cool completely.
- For the filling, beat butter, powdered sugar, and espresso until smooth.
- Sandwich two macaron shells with the filling.
