Delicious cold side dishes perfect for Thanksgiving.
Ingredients

- 1 cup of diced cucumbers
- 2 cups of cherry tomatoes, halved
- 1 cup of red onion, diced
- 1/2 cup of fresh parsley, chopped
- 1/4 cup of olive oil
- 2 tablespoons of red wine vinegar
- Salt and pepper to taste
Instructions
- Combine cucumbers, cherry tomatoes, red onion, and parsley in a large bowl.
- In a separate bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
- Pour the dressing over the vegetable mixture and toss to coat.
- Refrigerate for at least 30 minutes before serving.
- Serve chilled.
