Ingredients

  • 2 cups of cherry tomatoes, halved
  • 1 cup of red onion, diced
  • 1/2 cup of fresh parsley, chopped
  • 1/4 cup of olive oil
  • 2 tablespoons of red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Combine cucumbers, cherry tomatoes, red onion, and parsley in a large bowl.
  2. In a separate bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
  3. Pour the dressing over the vegetable mixture and toss to coat.
  4. Refrigerate for at least 30 minutes before serving.
  5. Serve chilled.
