- 1 bunch collard greens
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon red pepper flakes (optional)
Instructions
- Wash the collard greens thoroughly and remove the stems.
- Chop the leaves into bite-sized pieces.
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, sauté until soft.
- Add collard greens to the pot and stir well.
- Pour in vegetable broth, add salt, pepper, and red pepper flakes.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Serve warm.
