Ingredients

- 2 cups of rice
- 1 cup of mixed vegetables (carrots, peas, bell peppers)
- 1/2 cup of soy sauce
- 1 tablespoon of sesame oil
- 1 teaspoon of ginger, minced
- 2 green onions, chopped
- 1/4 cup of cilantro, chopped
- 1/2 cup of cooked shrimp (optional)
Instructions
- Rinse the rice and cook according to package instructions.
- Heat sesame oil in a pan over medium heat.
- Add ginger and sauté for 1 minute.
- Add mixed vegetables and cook until tender.
- Stir in cooked rice and soy sauce.
- Add shrimp if using and mix well.
- Garnish with green onions and cilantro before serving.
Notes
- Use different colored vegetables for more vibrancy.
- This dish can be made vegetarian by omitting shrimp.
