Ingredients

Scale
  • 2 cups of rice
  • 1 cup of mixed vegetables (carrots, peas, bell peppers)
  • 1/2 cup of soy sauce
  • 1 tablespoon of sesame oil
  • 1 teaspoon of ginger, minced
  • 2 green onions, chopped
  • 1/4 cup of cilantro, chopped
  • 1/2 cup of cooked shrimp (optional)

Instructions

  1. Rinse the rice and cook according to package instructions.
  2. Heat sesame oil in a pan over medium heat.
  3. Add ginger and sauté for 1 minute.
  4. Add mixed vegetables and cook until tender.
  5. Stir in cooked rice and soy sauce.
  6. Add shrimp if using and mix well.
  7. Garnish with green onions and cilantro before serving.

Notes

  • Use different colored vegetables for more vibrancy.
  • This dish can be made vegetarian by omitting shrimp.
