Description
A colorful Vietnamese New Year meal filled with traditional flavors.
Ingredients
- Rice: 2 cups
- Chicken: 500 grams
- Carrots: 2, sliced
- Radish: 1, diced
- Bell peppers: 2, chopped
- Onions: 1, sliced
- Garlic: 3 cloves, minced
- Fish sauce: 3 tablespoons
- Herbs: cilantro and mint, for garnish
Instructions
- Rinse the rice under cold water until the water runs clear.
- Cook the rice in a rice cooker or pot with 4 cups of water.
- While the rice cooks, heat oil in a pan and sauté garlic and onions.
- Add chicken pieces to the pan and cook until browned.
- Stir in carrots, radish, and bell peppers. Cook until vegetables are tender.
- Add fish sauce to the mixture and stir well.
- Serve the chicken and vegetables over rice.
- Garnish with fresh herbs.
