Ingredients

  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup crushed chocolate sandwich cookies
  • 2 cups heavy cream
  • 1 cup powdered sugar
  • ½ cup crushed chocolate sandwich cookies for topping

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla. Mix until smooth.
  4. Stir in boiling water until well combined.
  5. Fold in crushed cookies.
  6. Pour batter into prepared pans.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Let the cakes cool in pans for 10 minutes, then transfer to wire racks.
  9. In a bowl, whip heavy cream and powdered sugar until stiff peaks form.
  10. Layer the cakes with whipped cream and remaining crushed cookies.
  11. Top the cake with more whipped cream and crushed cookies.
