Description

These are copycat versions of Chili’s famous southwest egg rolls, filled with chicken, black beans, corn, and spices.


Ingredients

  • 1 cup cooked chicken, shredded
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn, frozen or canned
  • 1/2 cup red bell pepper, diced
  • 1/4 cup green onion, sliced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 8 large flour tortillas
  • Oil for frying

Instructions

  1. In a bowl, mix chicken, black beans, corn, red bell pepper, green onion, spices, and cheese.
  2. Place a generous amount of the filling in the center of each tortilla.
  3. Fold the sides of the tortilla over the filling and roll tightly.
  4. Heat oil in a deep pan over medium heat.
  5. Fry the egg rolls until golden brown on all sides.
  6. Drain on paper towels and serve hot.
