Description

A refreshing and nutritious salad made with quinoa, corn, and black beans.


Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook quinoa in water according to package instructions.
  2. In a large bowl, combine black beans, corn, bell pepper, red onion, and cilantro.
  3. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  4. Add cooked quinoa to the vegetable mixture.
  5. Pour dressing over the salad and mix well.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For added flavor, you can include avocado or diced jalapeño.
