Description
A refreshing and nutritious salad made with quinoa, corn, and black beans.
Ingredients

- 1 cup quinoa, rinsed
- 2 cups water
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1/4 cup cilantro, chopped
- 1/4 cup lime juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Cook quinoa in water according to package instructions.
- In a large bowl, combine black beans, corn, bell pepper, red onion, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
- Add cooked quinoa to the vegetable mixture.
- Pour dressing over the salad and mix well.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- For added flavor, you can include avocado or diced jalapeño.
- This salad can be served as a side dish or a main course.
- Store leftovers in an airtight container in the fridge for up to 3 days.
