- 2 cups corn kernels
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup butter, melted
- 1 package (8.5 oz) corn muffin mix
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix corn, sour cream, melted butter, and cheddar cheese.
- Add corn muffin mix, sugar, salt, and pepper. Stir until combined.
- Pour the mixture into a greased baking dish.
- Bake for 30-35 minutes or until golden brown.
- Let it cool for a few minutes before serving.
Notes
- Can substitute fresh corn with canned or frozen corn.
- Add diced jalapeños for a spicy kick.
- Store leftovers in the refrigerator for up to 3 days.
