Ingredients

- 1 cup cottage cheese
- 6 large eggs
- 1/2 cup shredded cheese
- 1/4 cup chopped spinach
- 1/4 cup diced bell pepper
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together the eggs and cottage cheese.
- Add shredded cheese, spinach, and bell pepper.
- Season with salt and pepper.
- Pour the mixture into a greased muffin tin.
- Bake for 20-25 minutes or until set.
- Let cool before removing from the tin.
