Ingredients

- 1 pound ground beef
- 1 cup bread crumbs
- 1/2 cup onion, chopped
- 1/4 cup milk
- 1 egg
- 2 teaspoons salt
- 1 teaspoon pepper
- 2 cups mashed potatoes
- 1 cup shredded cheese
- 1/2 cup barbecue sauce
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix ground beef, bread crumbs, onion, milk, egg, salt, and pepper.
- Form the mixture into a loaf shape and place in a baking dish.
- Spread barbecue sauce on top of the meatloaf.
- In another bowl, mix mashed potatoes and cheese.
- Spread the potato mixture over the meatloaf.
- Bake for 1 hour or until the meatloaf is cooked through.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add your favorite seasonings.
- Use leftover mashed potatoes for quicker prep.
- Serve with a side salad for a complete meal.
