A refreshing and nutritious salad featuring quinoa, cranberries, and apples.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cranberries, dried
  • 1 apple, diced
  • 1/4 cup walnuts, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes or until water is absorbed.
  4. Remove from heat and let it cool.
  5. In a large bowl, combine cooled quinoa, cranberries, apple, and walnuts.
  6. In a small bowl, whisk together olive oil, apple cider vinegar, salt, and pepper.
  7. Pour the dressing over the salad and toss gently.
  8. Top with feta cheese before serving.
