- 4 cups whole milk
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 2 eggs
- 1/2 cup raisins (optional)
Instructions
- In a large saucepan, combine rice, milk, sugar, salt, and cinnamon.
- Bring to a gentle boil over medium heat, stirring frequently.
- Reduce heat and simmer for about 30 minutes, stirring often until the rice is tender.
- In a bowl, beat the eggs and mix in a small amount of the pudding to temper them.
- Stir the egg mixture back into the pudding and cook for an additional 5 minutes.
- Add vanilla extract and raisins if desired.
- Serve warm or chilled, garnished with a sprinkle of cinnamon.

- Use Arborio rice for the creamiest texture.
- Adjust sugar to taste.
