- 8 oz fettuccine pasta
- 2 boneless, skinless chicken breasts (about 1 lb), sliced
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Cook fettuccine according to package instructions until al dente. Drain and set aside.
- In a bowl, coat sliced chicken with Cajun seasoning.
- Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned and cooked through, about 6-8 minutes. Remove chicken from skillet.
- In the same skillet, add bell peppers, onions, and garlic. Sauté until softened, about 3-4 minutes.
- Add chicken broth and bring to a simmer. Reduce heat to low.
- Stir in heavy cream and Parmesan cheese, mixing until smooth.
- Add cooked chicken and fettuccine to the skillet, tossing to coat in the sauce.
- Season with salt and pepper to taste. Serve immediately.
Notes
- For added spice, increase the amount of Cajun seasoning.
- Consider garnishing with fresh parsley for color.
