  • 100ml heavy cream
  • 50g Parmesan cheese, grated

  • Fresh parsley, chopped for garnish

Instructions

  1. Cook spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water.
  2. In a large skillet, cook pancetta over medium heat until crispy. Remove and set aside.
  3. In the same skillet, add diced chicken and cook until browned and cooked through. Add minced garlic and sauté for 1 minute.
  4. In a bowl, whisk together eggs, cream, and Parmesan cheese. Season with salt and pepper.
  5. Add cooked spaghetti to the skillet with chicken and garlic. Remove from heat.
  6. Quickly mix in the egg mixture, adding reserved pasta water as needed to achieve a creamy consistency.
  7. Stir in pancetta and adjust seasoning if necessary.
  8. Serve immediately, garnished with fresh parsley.
