A rich and comforting creamy chicken tortellini soup.
Ingredients

- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 package (9 ounces) cheese tortellini
- 1 cup heavy cream
- 1 cup spinach
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until onion is translucent.
- Pour in chicken broth and bring to a boil.
- Add shredded chicken and tortellini, cook according to package instructions.
- Stir in heavy cream and spinach, cook until heated through.
- Season with salt and pepper.
- Serve hot.

- Use rotisserie chicken for quicker preparation.
- Substitute vegetable broth for a vegetarian version.
