Description
A creamy, high protein pasta salad that’s perfect for lunch or dinner.
Ingredients

- 8 oz whole grain pasta
- 1 cup Greek yogurt
- 1/2 cup cottage cheese
- 1 cup cherry tomatoes, halved
- 1 cup diced cucumber
- 1/2 cup diced bell pepper
- 1/4 cup red onion, finely chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions.
- In a large bowl, mix Greek yogurt and cottage cheese.
- Add cherry tomatoes, cucumber, bell pepper, and red onion to the bowl.
- Once pasta is cooked, drain and let it cool.
- Add cooled pasta to the bowl and mix well.
- Drizzle with olive oil and lemon juice, then season with salt and pepper.
- Toss everything together until well combined.
- Chill for at least 30 minutes before serving.
Notes
- Store leftovers in an airtight container in the fridge.
- This salad can be made a day in advance.
