Description

A creamy, high protein pasta salad that’s perfect for lunch or dinner.


Ingredients

  • 8 oz whole grain pasta
  • 1 cup Greek yogurt
  • 1/2 cup cottage cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • 1/2 cup diced bell pepper
  • 1/4 cup red onion, finely chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions.
  2. In a large bowl, mix Greek yogurt and cottage cheese.
  3. Add cherry tomatoes, cucumber, bell pepper, and red onion to the bowl.
  4. Once pasta is cooked, drain and let it cool.
  5. Add cooled pasta to the bowl and mix well.
  6. Drizzle with olive oil and lemon juice, then season with salt and pepper.
  7. Toss everything together until well combined.
  8. Chill for at least 30 minutes before serving.

  • Store leftovers in an airtight container in the fridge.
