Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup honey
  • 2 tablespoons dried culinary lavender
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 5 large egg yolks

Instructions

  1. In a saucepan, combine cream, milk, honey, lavender, and salt. Heat over medium until hot, but not boiling.
  2. In a bowl, whisk egg yolks. Gradually add hot mixture to yolks while whisking.
  3. Return the mixture to the saucepan. Cook over low heat until thickened.
  4. Strain the mixture through a fine sieve to remove lavender.
  5. Add vanilla extract and cool the mixture in the refrigerator.
  6. Pour cooled mixture into an ice cream maker and churn according to manufacturer’s instructions.
  7. Transfer to a container and freeze until firm.
