Ingredients

- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup honey
- 2 tablespoons dried culinary lavender
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 5 large egg yolks
Instructions
- In a saucepan, combine cream, milk, honey, lavender, and salt. Heat over medium until hot, but not boiling.
- In a bowl, whisk egg yolks. Gradually add hot mixture to yolks while whisking.
- Return the mixture to the saucepan. Cook over low heat until thickened.
- Strain the mixture through a fine sieve to remove lavender.
- Add vanilla extract and cool the mixture in the refrigerator.
- Pour cooled mixture into an ice cream maker and churn according to manufacturer’s instructions.
- Transfer to a container and freeze until firm.
Notes
- Use culinary lavender for best flavor.
- Allow ice cream to sit at room temperature for a few minutes before serving.
