- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup creamy peanut butter
- 1 cup cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1/2 cup chocolate ganache, for topping
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
- In a mixer, beat together the peanut butter, cream cheese, powdered sugar, and vanilla extract until smooth.
- In a separate bowl, whip the heavy cream to stiff peaks.
- Fold the whipped cream into the peanut butter mixture until well combined.
- Pour the mixture over the crust in the springform pan.
- Bake for 45-50 minutes until the cheesecake is set but still slightly jiggly in the center.
- Turn off the oven and let the cheesecake cool inside for 1 hour.
- Refrigerate for at least 4 hours or overnight.
- Before serving, drizzle chocolate ganache on top.
Notes
- For a chocolate crust, substitute chocolate cookie crumbs for graham crackers.
- Top with crushed peanuts for added texture.
- For a richer flavor, use dark chocolate ganache.
