- 12 oz penne pasta
- 2 tbsp olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1/2 tsp red pepper flakes
- 1 cup tomato puree
- 1/2 cup vodka
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the penne according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add onion and sauté until translucent.
- Add garlic and red pepper flakes. Sauté for another minute until fragrant.
- Pour in the vodka and let it reduce for about 2-3 minutes.
- Add the tomato puree and stir to combine. Simmer for 5 minutes.
- Lower the heat and stir in the heavy cream. Cook for another 3-4 minutes until the sauce thickens.
- Mix in the Parmesan cheese and season with salt and pepper.
- Add the cooked penne to the sauce and toss to coat evenly.
- Serve hot, garnished with fresh basil.
Notes
- For a smoky flavor, add pancetta or bacon.
- Substitute penne with rigatoni for a different texture.
- Adjust the amount of red pepper flakes to control spiciness.
