Description
Creamy spinach mushroom lasagna is a delicious and hearty dish. It layers pasta, rich cheese, and a flavorful spinach and mushroom filling.
Ingredients
- Lasagna noodles – 12 sheets
- Spinach – 4 cups
- Mushrooms – 2 cups, sliced
- Ricotta cheese – 15 oz
- Mozzarella cheese – 2 cups, shredded
- Parmesan cheese – 1 cup, grated
- Olive oil – 2 tablespoons
- Garlic – 3 cloves, minced
- Onion – 1, chopped
- Salt – to taste
- Pepper – to taste
- Marinara sauce – 2 cups
- Egg – 1, beaten
Instructions
- Preheat your oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions, then drain.
- In a skillet, heat olive oil over medium heat. Add onions and garlic; sauté until fragrant.
- Add mushrooms and cook until soft. Stir in spinach until wilted. Season with salt and pepper.
- In a bowl, mix ricotta cheese, beaten egg, half of the Parmesan, and some salt and pepper.
- Spread a layer of marinara sauce in the bottom of a baking dish.
- Layer noodles, ricotta mixture, spinach mushroom mix, and mozzarella cheese. Repeat layers.
- Finish with a layer of noodles, marinara sauce, and remaining mozzarella and Parmesan cheese.
- Bake for 30-40 minutes until cheese is bubbly and golden.
- Let it cool for 10 minutes before serving.
Notes
- Use fresh spinach for better flavor.
- Feel free to add more vegetables if desired.
- Let leftovers cool completely before storing in the fridge.
