- 12 large pasta shells
- 1 cup shrimp, peeled and deveined
- 1 cup spinach, fresh
- 1 cup mushrooms, sliced
- 1 cup ricotta cheese
- 1/2 cup cream
- 1/2 cup mozzarella cheese, shredded
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the pasta shells according to package instructions and set aside.
- In a skillet, heat olive oil over medium heat and add minced garlic.
- Add mushrooms and sauté until soft.
- Add shrimp and cook until pink.
- Stir in spinach and cook until wilted.
- In a bowl, mix ricotta, cream, and half of the mozzarella.
- Combine the shrimp mixture with the ricotta mixture.
- Stuff the cooked shells with the filling.
- Place stuffed shells in a baking dish and top with remaining mozzarella.
- Bake for 20 minutes until cheese is melted and bubbly.
Notes
- Use fresh or frozen shrimp.
- Adjust seasoning to your taste.
- Can substitute other cheeses if preferred.
