- 2 large eggs
- 1 cup breadcrumbs

Instructions
- Slice the zucchinis into rounds.
- Set up a breading station with flour, beaten eggs, and breadcrumbs.
- Dip each zucchini slice in flour, then in eggs, and finally coat with breadcrumbs.
- Heat oil in a frying pan over medium heat.
- Fry the zucchini slices until golden brown, about 2-3 minutes per side.
- Remove and drain on paper towels.
- Serve warm with your favorite dipping sauce.
Notes
- For added flavor, season the breadcrumbs with garlic powder or Italian herbs.
- Store leftovers in an airtight container in the fridge for up to 2 days.
