Ingredients

  • 1 cup dried chickpeas, soaked overnight
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon baking powder
  • Salt to taste
  • Pepper to taste
  • Oil for frying

Instructions

  1. Drain and rinse the soaked chickpeas.
  2. In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper.
  3. Pulse until coarse and mixed well.
  4. Form the mixture into small balls or patties.
  5. Heat oil in a frying pan over medium heat.
  6. Fry the falafel until golden brown on all sides.
  7. Remove and drain on paper towels.
  8. Serve warm with tahini sauce or in pita bread.
