Crispy mashed potato pancakes that are easy to make and delicious.
Ingredients

- 2 cups mashed potatoes
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped green onions
- 1 large egg
- Salt and pepper to taste
- Oil for frying
Instructions
- In a bowl, combine mashed potatoes, flour, Parmesan cheese, green onions, egg, salt, and pepper.
- Mix until well combined.
- Heat oil in a skillet over medium heat.
- Scoop mixture and form into patties.
- Fry patties until golden brown, about 3-4 minutes on each side.
- Remove and drain on paper towels.
- Serve warm.
Notes
- Can be made with leftover mashed potatoes.
- Adjust seasoning to your taste.
- Serve with sour cream or applesauce.
