Description

Crispy oven baked potato skins are a delicious appetizer or snack. They are crunchy on the outside and soft on the inside, perfect for any gathering.


Ingredients

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the potatoes. Prick them with a fork.
  3. Bake the potatoes for 45 minutes or until tender.
  4. Let the potatoes cool slightly before handling.
  5. Cut each potato in half and scoop out most of the flesh, leaving a thin layer.
  6. Brush the skins with olive oil and season with salt and pepper.
  7. Place the skins on a baking sheet and bake for an additional 15 minutes until crispy.
  8. Remove from the oven and sprinkle with cheddar cheese.
  9. Return to the oven for 5 more minutes until the cheese is melted.
  10. Serve with sour cream and green onions on top.

Notes

  • For extra flavor, add bacon bits before the cheese.
  • You can use any cheese of your choice.
  • Store leftovers in an airtight container in the fridge.
