Description
Crispy oven baked potato skins are a delicious appetizer or snack. They are crunchy on the outside and soft on the inside, perfect for any gathering.
Ingredients

- 4 large russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and scrub the potatoes. Prick them with a fork.
- Bake the potatoes for 45 minutes or until tender.
- Let the potatoes cool slightly before handling.
- Cut each potato in half and scoop out most of the flesh, leaving a thin layer.
- Brush the skins with olive oil and season with salt and pepper.
- Place the skins on a baking sheet and bake for an additional 15 minutes until crispy.
- Remove from the oven and sprinkle with cheddar cheese.
- Return to the oven for 5 more minutes until the cheese is melted.
- Serve with sour cream and green onions on top.
Notes
- For extra flavor, add bacon bits before the cheese.
- You can use any cheese of your choice.
- Store leftovers in an airtight container in the fridge.
