Crispy parmesan chicken bites served with a smoked cajun alfredo gemelli pasta.


Ingredients

  • 1 pound chicken breast, cut into bite-sized pieces
  • 1 cup grated parmesan cheese
  • 1 cup breadcrumbs
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 8 ounces gemelli pasta
  • 1 cup heavy cream
  • 1/2 cup smoked gouda cheese, shredded
  • 1 tablespoon cajun seasoning
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix parmesan cheese, breadcrumbs, garlic powder, paprika, salt, and pepper.
  3. Dip chicken pieces in beaten eggs, then coat with the breadcrumb mixture.
  4. Place coated chicken bites on a baking sheet and drizzle with olive oil.
  5. Bake for 20-25 minutes until golden brown and cooked through.
  6. Cook gemelli pasta according to package instructions.
  7. In a saucepan, heat heavy cream and stir in smoked gouda and cajun seasoning until melted.
  8. Combine cooked pasta with the sauce.
  9. Serve chicken bites over the pasta.
