Instructions
- Grate the zucchinis and sprinkle with salt. Let them sit for 10 minutes to release excess moisture.
- Use a clean kitchen towel to squeeze out the moisture from the zucchini.
- In a mixing bowl, combine the grated zucchini, flour, Parmesan cheese, egg, black pepper, garlic powder, onion powder, and parsley.
- Mix until well combined.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the mixture into the hot oil, flattening them slightly with the back of the spoon.
- Fry for 3-4 minutes on each side, or until golden brown and crispy.
- Remove from the pan and drain on paper towels.
