Description
A simple and hearty dish made with black-eyed peas cooked in a crockpot.
Ingredients

- 2 cups black-eyed peas, dried
- 6 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon cumin
- 1 bay leaf
- 4 slices bacon, chopped (optional)
Instructions
- Rinse the black-eyed peas and remove any debris.
- Place the peas in the crockpot.
- Add water, onion, garlic, bell pepper, salt, black pepper, cumin, bay leaf, and bacon.
- Stir the ingredients well.
- Cover the crockpot and cook on low for 6-8 hours or until peas are tender.
- Remove the bay leaf before serving.
Notes
- Soaking the peas overnight can reduce cooking time.
- Adjust seasonings to your taste.
- This dish pairs well with cornbread.
