A hearty and comforting crockpot chicken pot pie made with tender chicken, vegetables, and a creamy sauce.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup carrots, diced
- 1 cup peas
- 1 cup potatoes, diced
- 1/2 cup onion, chopped
- 1/4 cup flour
- 1 can cream of chicken soup
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pie crust
Instructions
- In a crockpot, combine chicken, carrots, peas, potatoes, and onion.
- In a bowl, mix flour, cream of chicken soup, chicken broth, garlic powder, thyme, salt, and pepper.
- Pour the mixture over the chicken and vegetables in the crockpot.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or until vegetables are tender.
- About 30 minutes before serving, place pie crust over the top of the mixture.
- Cook until the crust is golden and flaky.
Notes
- For a richer flavor, add more herbs.
- You can use leftover turkey instead of chicken.
- This dish can be frozen for later use.
