Ingredients

- 1 onion, chopped
- 2 carrots, sliced
- 3 cups chicken broth
- 1 cup milk
- 1 cup shredded cheese
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Place diced potatoes, onion, and carrots in the crockpot.
- Add chicken broth and garlic powder.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Before serving, stir in milk and cheese.
- Add salt and pepper to taste.
Notes
- For a thicker soup, mash some potatoes before adding milk.
- Use vegetable broth for a vegetarian option.
- Top with bacon bits or green onions if desired.
